Augmenting and extractive
Ingredients
- 2 tbsp ghee
- 2 tsp fresh chopped ginger
- 1 tsp fresh chopped turmeric
- 1 tsp fenugreek seeds
- ¾ tsp coriander seeds
- ½ tsp mineral salt
- 3 cups chopped beets and beet greens
- 1 cup chopped zucchini
- 2 cups chopped broccoli
- ½ tsp tamarind past
- 1/3 tsp cinnamon powder
- ¼ cup fresh chopped cilantro

Method
Heat ghee on medium heat and add ginger, turmeric, fenugreek seeds, coriander seeds, and salt. Cook until the spices’ aroma comes up. Add vegetables and stir to coat with ghee and spices. Simmer lightly for 2-3 minutes. Add tamarind, cinnamon, and water to ½ level of vegetables, stir, and cover with a lid. Reduce the heat and simmer until vegetables are brighter in colour or until slightly softer.
