Ingredients:
- 2 cups brown rice
- 1 orange
- ½ red capsicum, finely chopped
- 3 spring onions, sliced
- 1 green apple, peeled and finely chopped
- ½ cup walnuts or pecan nuts, chopped
- ¼ cup slivered raw almonds
- 1/3 cup washed sultanas
- 1/3 cup chopped peaches or apricots
- 1/3 cup chopped dried pears
- ¼ cup chopped fresh mint
Dressing:
- 1 tblsp grated fresh ginger
- 1 tblsp lemon juice
- 1 cup apricot or grape juice
- ¼ teasp ground cardamom
Method:
Boil rice until cooked-rinse and drain. Remove rind from orange with vegetable peeler. Cut rind into thin pieces about 3-5 cm long. Combine the dressing ingredients in a screw top jar and shake well.
Mix all ingredients into rice, pour dressing over and mix well.
You can use some of the orange rind to garnish. This recipe lends itself to variation so go ahead and experiment with different juices (orange with cinnamon is nice) and different spices including nutmeg. You can also vary the combination of fruits and nuts.
